  • FOR THE CROUTONS
  • For the croutons
  • 1 mini baguette
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp grated cheese [dairy or dairy-free]
  • ½ tsp garlic granules
  • ¼ tsp dried basil

Directions

[1] Preheat the oven to 180ºc. Place the tomatoes, crimson pepper, and crimson onion chunks in a few ovenproof dishes ensuring they’re in a single layer.

[2] Add the garlic cloves, drizzle over the olive oil and add a beneficiant pinch of salt to every dish.

[3] Roast within the oven for 35 minutes letting the tomatoes collapse and the peppers caramelise.

[4] After half-hour, in a big pan, add the vegetable inventory, sun-dried tomato paste and dried basil and as soon as the greens within the oven have roasted, add these to the pan too.
