Ama Brewery within the Basque Nation creates glowing kombuchas which are aged within the bottle for at least six months – akin to a pét-nat wine or champagne. The brewery is headed by Dani Lasa and Ramón Perisé, former and present R&D cooks at famed two-Michelin-starred restaurant Mugaritz in San Sebastian. The kombucha is made with tea from the Uncommon Tea Firm and spring water from the Basque Nation. BI, made with wild lemongrass, is gently bubbly and candy with lime and white blossom notes.
